Application Of Sodium Carboxymethyl Cellulose In Food

FAO and WHO have approved the use of pure CMC for food. It was approved after strict biological and toxicological research and test. The international standard intake of safety (ADI) is 25mg/ (kg. D), which is about 1.5 g/d per person. It has been reported that there was no toxic response to a 10 kg intake. CMC is not only good emulsifying stabilizer and thickener in food application, but also has excellent freezing and melting stability, and can improve flavor and prolong storage time. The amount of soy milk, ice cream, ice cream, jelly, drink and canned is about 1% - 1.5%. CMC can also form a stable emulsion dispersing liquid with vinegar, soy sauce, vegetable oil, juice, gravy, vegetable juice and so on. The dosage is 0.2% ~ 0.5%. In particular, the emulsifying performance of dynamic, vegetable oil, protein and water solution is excellent, which can make it form the homogeneous emulsion with stable performance. Because of its safety and reliability, its dosage is not limited by the national food hygiene standard ADI.
